What is “Kōne”?


Kōne is a rare cut of beef taken from the area around the shoulder blade, near the base of the front leg. In Hiroshima, it has long been a beloved classic of yakiniku (Japanese BBQ). This cut is beautifully marbled, with alternating layers of lean meat and fat.

With just one bite, the fat gently melts in your mouth, releasing a rich sweetness and deep umami flavor. Despite its marbling, the fat is surprisingly light, leaving a clean and refreshing aftertaste. Grilled with salt, it brings out its natural savoriness; dipped in sauce, it pairs perfectly with rice.

Since it’s not well known outside Hiroshima, it’s truly a local soul food you should try when visiting the region.

While most Wagyu in Japan is black-haired Wagyu, Akaushi (Japanese Brown Wagyu) makes up only about 4% of all Wagyu produced — a truly rare breed. Among them, Enju Beef has gained remarkable recognition in just three years since its debut, now served in world-class hotels, Michelin-starred restaurants, and even luxury suites at famous theme parks.

Every detail — from the feeding environment and carefully selected feed to the deep care and devotion given to each animal — contributes to the signature qualities of Enju Beef: a refined umami flavor and incredibly light, clean-tasting fat.

Our restaurant has an exclusive partnership with Harada Livestock, making us the only place in Hiroshima offering dishes made with 100% Enju Beef Kōne.

Part One – The Spirit

For over twenty years, we have carried a dream — to open a restaurant dedicated to “Kōne,” Hiroshima’s soul food.
Through a fateful encounter with the owner of a red beef izakaya in Aichi and Harada Livestock, the producer of Enju Beef, that dream has finally come true.

Enju Beef is a premium brand known for its rich umami and delicately sweet, light-tasting fat — a truly exceptional Wagyu served only at select hotels and fine restaurants. Being able to offer the Kōne cut from this remarkable beef is both an honor and a deep source of joy for us.

With heartfelt gratitude for these connections, we are committed to creating a society filled with love, harmony, and appreciation — through the power of food.

Part Two – Natural Wasabi from Yoshiwa

A Miraculous Encounter

Inspired by our miraculous encounter with Enju Beef, we began developing the concept for Irohauta — and from that journey, a new idea was born: enjoying Kōne with freshly grated wasabi.

The owner personally visited Uemoto Wasabi Honpo, a renowned producer in Yoshiwa, one of Japan’s most respected wasabi regions. Knowing the prestige of Yoshiwa’s wasabi, we were prepared for a difficult negotiation — but after sharing our sincere passion and vision, they graciously agreed to collaborate with us.

Thus, another miraculous connection was formed.

What makes Yoshiwa’s natural wasabi special is its gentle sweetness that follows the initial sharp spiciness.
It’s so highly regarded that some restaurants in the prefecture use only wasabi from Yoshiwa.

Part Three – Freshly Milled “Akiroman” Rice from Kitahiroshima

The rice we serve is “Akiroman,” a premium Hiroshima-grown variety carefully cultivated by a farmer in Minamikata, Kitahiroshima Town, a close friend of our owner.
Nurtured with pure mountain water and crisp, clean air, this rice is truly a crystal born of nature and human devotion.

We purchase the rice as whole grains and mill it in-house to bring out its natural aroma and freshness. When cooked, each grain stands tall and glistens with a beautiful sheen. With every bite, you’ll experience a fluffy texture and gentle sweetness that fill your mouth.

When paired with our Enju Beef Kōne, the finest brand of Akaushi beef, the harmony of flavors enhances each element, creating a truly blissful dining experience.

Part Four – Our Secret Recipe: Homemade Hand-Squeezed Yuzu Ponzu

The ponzu we serve is a special house-made blend, crafted in our kitchen using a secret recipe passed down from a renowned establishment.
Carefully aged to perfection, this ponzu is made with patience and dedication to draw out the full flavor of its ingredients. Its refreshing citrus tang and deep, mellow richness create a beautiful harmony that enhances every dish.

When drizzled over our Kōne Rice Bowl, it cuts through the richness of the fat for a refreshing “flavor shift.”
Paired with our Kōne Jingisukan, it brings out the natural sweetness of the vegetables.
